Your new role
As Head Pastry Chef, you'll work closely with the Executive Head Chef and take responsibility for the entire pastry section within a busy Southwold kitchen. You'll create consistently impressive desserts and sweet treats while helping the hotel maintain its high culinary standards.
You will:
Prepare and present high-quality desserts, pastries and sweet treats
Lead the day-to-day running of the pastry section
Plan and introduce regular menu changes
Develop creative dishes using seasonal and local produce
Maintain the standards expected of a 2 AA Rosette restaurant
Manage pastry stock, ordering and wastage
Ensure excellent food safety, hygiene and allergen controls
Work closely with the wider kitchen and front-of-house teams
Support service across weekdays and weekends
What we're looking for
The successful Head Pastry Chef will have previous pastry experience within a four-star hotel, AA Rosette restaurant or similarly quality-led kitchen.
You'll also need:
Strong pastry and dessert preparation skills
Experience managing or taking ownership of a section
Creativity and confidence developing new dishes
A hands-on and organised approach
Excellent attention to detail and presentation
The ability to remain calm during busy services
Strong communication and teamwork skills
Flexibility to work straight shifts, split shifts and weekends
