Bath Sushi (Ryujin Ltd) is a busy independent Japanese & sushi restaurant in central Bath. Most of our orders are Deliveroo/UberEats plus some eat-in and collection. We are looking for an experienced Head Sushi Chef to run our sushi section (sushi is around 60% of sales).
What you’ll do
* Prepare sushi rice, maki, uramaki, nigiri and simple sashimi to our recipes
* Run the sushi station independently at lunch and dinner
* Keep the station clean, organised and fully stocked
* Work at a good pace during busy periods (especially evenings and weekends)
* Follow food safety and hygiene standards (labelling, storage, rotation)
* Help with prep (cutting fish/veg, portioning, simple sauces)
* Work with the kitchen team and management to improve menu and presentation
What we’re looking for
* Previous experience as a sushi chef in a restaurant (not home cooking)
* Good knife skills and strong understanding of sushi hygiene
* Able to work quickly while keeping portions and presentation consistent
* Reliable, responsible and comfortable running the sushi section
* Team player – this is a small team kitchen and others may help on sushi/packing when it’s busy
* You must have the legal right to work in the UK (we will do right-to-work checks)
Pay & benefits
* Training/probation rate from £13.00–£14.50 per hour (DOE) for ~45–50 hours/week
* After a successful paid trial and 3-month probation, strong head chefs who meet our standards (speed, consistency, presentation) can earn up to £16.00 per hour, plus tips
* Performance bonus: extra £150 in any week where total restaurant sales are over £10,000, for chefs meeting our speed/quality standards (overall take-home can be around £800/week in strong weeks, depending on tax)
* Free staff accommodation – kingsize room in a good area of Bath
* Staff meal on shift
* Family-run, friendly environment, open Tuesday–Sunday (12–3 & 5–10)
Final pay level will depend on your performance in the paid trial shift and during the 3-month probation (quality, speed, consistency).
