The opportunity:
Global Talent 2020 are excited to be working with one of Edinburgh s leading restaurant companies at their beautifully appointed cafe/restaurant venue in the heart of city centre. This boutique group are looking for a passionate Sous Chef for their popular, quality focused fine dining restaurant operations and have been in the city for 20+ years.
The Sous role is part of a small, dedicated Kitchen brigade, producing high level, locally sourced, fresh, fine dining, food menus across the main restaurant, and private dining areas of this beautifully positioned venue.
The group do not compromise on quality and every single dish is made from scratch, with herbs and ingredients even grown in their company garden.
The venue is open during the day and closes at 17:00 so there will be mostly day shifts available. There are evening events occasionally so the ideal candidate must be flexible.
There is a 44 hour working week based on a 5 day working week which can be changed to a 4 day working week when possible.

The person:
Our reputable client at Global Talent 2020, is looking for a solid and passionate leader in the kitchen to help with menu development, lead the team and deliver a high-quality standard of food across all restaurants that this kitchen caters to, serving 300+ covers daily. The ideal candidate will need to be confident and good at building and sustaining relationships in an already established team. Their responsibilities include maintaining the high standard of food quality, menu development, adhering to the company brand standards, H&S standards and continuing the high reputation of the venue.
The ideal Sous Chef candidate must have had prior experience of producing fresh quality food and had experience of volume restaurants in the high street space. You will need to be highly approachable with your personality, as you will be interacting with other senior department heads, regional management, and with all levels of the site diverse teams.
Our client requires an ideal Sous Chef, that is keen to train, coach and mentor their teams, evolve food services, deliver consistent menus and food concepts, and further the reputation of the business as an Employer of choice. Due to the reputation and expectations of the guests, the individual must posses a good attention to detail and be passionate about their food.
As the Sous Chef, you must be proven to be flexible, and highly adaptive in all your approaches to your team, and with delivery of concepts developed with the Head Chef and company Executive Chef.
As Sous Chef, you must also be someone that not only has strong all-round culinary abilities, great presentation skills, possess food innovation skills, but someone that also is an effective manager of the kitchen environment, health, and safety, COSHH, RIDDOR, recruitment, training, and mentoring of others, and possess strong cost & budgetary control skill sets of their area.
