Job Description
The Assistant Food and Beverage Manager is responsible for assisting the F&B Manager in overseeing all operations within the Food and Beverage department to ensure high-quality service, profitability, and compliance with health and safety regulations. This role involves managing staff, maintaining budgets, coordinating with kitchen and service teams, and creating an exceptional dining experience for guests.
Duties:
- Assist in overseeing the day-to-day operations of all F&B outlets, including restaurants, bars, room service, and banqueting.
- Ensure that all food and beverage items are prepared and served according to the hotel’s standards and guest expectations.
- Monitor and maintain quality and consistency across all F&B outlets.
- Train and supervise F&B staff, including waitstaff and bartenders.
- Create and manage staff schedules to ensure adequate coverage and efficient operations.
- Maintain a strong presence in all F&B outlets to interact with guests and address any issues or feedback promptly.
- Ensure a high level of guest satisfaction by overseeing service standards and implementing improvement initiatives.
- Handle guest complaints and special requests with professionalism and efficiency.
- Assist in developing and managing budgets for all F&B outlets, ensuring cost control and profitability.
- Monitor financial performance, including sales, costs, and profitability, and implement strategies to achieve financial targets.
- Oversee inventory management, including ordering, stock control, and waste reduction.
- Establish relationships with suppliers and negotiate contracts to ensure the best prices and quality.
- Ensure compliance with procurement policies and maintain accurate records of purchases and stock levels.
- Work with the culinary team to develop innovative and appealing menus that meet market trends and guest preferences.
- Regularly review and update menus based on guest feedback and sales performance.
- Ensure all menus comply with dietary requirements and food safety standards.
- Ensure all F&B operations comply with health and safety regulations, including food hygiene and sanitation standards.
- Conduct regular inspections and audits to maintain high standards of cleanliness and safety.
- Implement and monitor HACCP procedures and other food safety management systems.
- Develop and execute marketing and promotional strategies to increase F&B sales and attract new guests.
- Collaborate with the marketing team to create promotional materials and campaigns.
- Organize and promote special events, themed nights, and other initiatives to enhance guest experience.
Qualifications
Relevant Hospitality Management Diploma
Skills
At least 3 years experience in a similar role. Strong leadership and team management abilities. Excellent communication and interpersonal skills. Financial acumen and experience with budgeting and cost control. Knowledge of health and safety regulations and food safety standards. Proficiency in Microsoft Office and F&B management software.
