Whim Hospitality is seeking a passionate Restaurant General Manager for Tillie's fine dining restaurant on Camp Lucy's 282-acre Resort property. This person should not only bring their talent but also their excitement to create an amazing holistic experience to everyone that walks through the doors. You will be a part of concepting all Front of House operations that will bring people from near and far to dine in the highly stylized restaurant space fashioned out of a 19th century Vietnamese town hall with inspirations from around the world.
Our property currently consists of 5 event spaces, 41 hotel rooms, activities, and a resort style pool. Camp Lucy will be adding 13 hotel rooms and a luxury destination Spa in 2024.
Responsibilities:
- Manage all day-to-day F&B operations to the highest standards at Tillie's Restaurant
- Actively work on the floor during service
- Inspect and develop standard operating procedures
- Identify customer needs and respond proactively
- Lead FOH team by attracting, recruiting, training, and appraising talented personnel
- Anticipate customer needs with the highest level of hospitality and professionalism
- Build seasonal menus for the cocktail programs
- Manage Private Dining Room sales
- Maintain all alcohol inventory
- Manage the tip process for all FOH staff
- Keep a dynamic and diverse wine menu
- Develop food and beverage related programs with the Activities Manager
- Follow-up with reviews and maintain high scores
- Daily quality control
- Manage pool program and staffing
- Assist with and work with culinary teams
Key qualities in the person we’re looking for include:
- Extraordinary wine and beverage knowledge with a sommelier certification or equivalent knowledge base is a bonus
- Ability to develop unique cocktails and beverages
- Strong training and etiquette skills at the highest level of hospitality
- Must be comfortable working on a computer with a grasp on most common operating systems such as Open Table and Silverware POS
- Proven ability to run high-end restaurants
- Must be able to work every weekend and holidays
- Must be organized and possess grace under pressure
