Job Summary
To assist in overall restaurant operations management in promoting and ensuring total guests’ satisfaction with a high standard of service and maximize potential revenue through exceeding guests’ expectations and hospitality. To promote and ensure a strong team environment in ensuring colleague motivation and satisfaction in delivering their duties promptly and courteously. As well as the supervision of duties and responsibilities of colleagues and set SOP’s for the outlet.
Key Duties and Responsibilities
- Maintain complete knowledge of all liquor brands, beers and non-alcoholic selections available in the outlet.
- Understand the characteristics and descriptions of every wine/champagne by glass and major wines on the list.
- Know designated glassware and garnishes for wines and beverages.
- Be familiar with all menu items, preparation methods, ingredients, portion sizes, garnishes, presentation and prices.
- Constantly review daily specials and top sales items; update briefing board throughout shift.
- Daily reservation updates and V.I.P. list.
- Correct maintenance and use of equipment.
- All department policies/services procedures.
- Abide by state liquor regulations, particularly those prohibiting service to minors and intoxicated persons.
Financial & Area Management
- Maintain restaurant profits through increased revenue and minimizing costs.
- Responsible for restaurant asset management.
- Accurately forecast business demands weekly to ensure efficient staffing and supplies ordering.
- Check storage areas for proper supplies, organization and cleanliness.
- Follow and maintain established par levels for supplies and equipment.
- Complete requisitions to replenish shortages or additional items needed.
Service & Guest Relations
- Check the status of all orders and ensure timely delivery.
- Assist and guide colleagues to ensure optimum service to guests.
- Assist Assistant Manager in conducting formal colleague training programs.
- Monitor guest reactions and confer with service colleagues.
- Review guest feedback with Assistant Manager.
- Anticipate guests’ needs and respond promptly.
- Monitor and maintain cleanliness of restaurant equipment and work areas.
- Assist in taking guests’ orders as necessary.
- Handle all guest complaints immediately and courteously.
- Greet all guests and escort them to their tables.
- Initiate guest interaction through feedback solicitation.
- Promote positive guest relations at all times.
- Inspect table setups for cleanliness and agreement with orders.
Staff Management
- Maintain colleague supervision at all times.
- Organize and direct colleagues in service and breakdown of hospitality.
- Ensure all closing duties for colleagues are completed.
- Provide feedback to colleagues on performance.
- Foster a cooperative working climate.
- Supervise all staff in daily operations.
- Assist with conducting appraisal interviews of line staff.
- Prepare weekly work schedules according to staffing guidelines.
- Ensure colleagues report to work as scheduled.
- Assign work and side duties according to departmental procedures.
- Conduct pre-shift meetings with colleagues.
- Inspect grooming and attire of colleagues.
- Monitor colleague performance and ensure adherence to standards.
Administration
- Complete work orders for maintenance repairs.
- Document pertinent information in the restaurant log book.
- Complete all paperwork in accordance with restaurant standards.
- Review status of assignments with co-managers.
- Complete departmental filing.

Skills, Experience & Educational
- Diploma in Hospitality Management advantageous.
- Minimum 2 years of experience in restaurants/hotels.
- Certification in wine, liquor and food handling courses an added bonus.
- Fair knowledge of all beverages.
- Ability to communicate in English with guests, management and co-workers.
- Ability to provide legible communication.
- Ability to compute good mathematical calculations.
- Basic Microsoft Office knowledge required.
