The Senior CDP will be responsible for assisting in the day-to-day kitchen operations, supervising junior chefs, and ensuring the highest culinary standards. The role requires a chef with extensive experience in fine dining, a passion for food, and a commitment to excellence. As a Senior CDP, you will work closely with the Head Chef and Sous Chef to create a memorable dining experience for guests at the lodge.
Key Responsibilities: - Food Preparation & Cooking :
- Assist in the preparation, cooking, and presentation of dishes according to the lodge's 5-star standards.
- Specialize in a particular section of the kitchen (e.g., meat, fish, sauces, or pastries), ensuring consistency and quality.
- Innovate and prepare unique dishes using local, seasonal ingredients to enhance the guest experience.
- Kitchen Supervision :
- Supervise and mentor junior chefs, ensuring proper techniques and practices are followed.
- Assist in planning and executing menus, with attention to dietary requirements and guest preferences.
- Ensure that all kitchen team members adhere to health and safety standards.
- Quality Control & Presentation :
- Maintain high standards of food hygiene and cleanliness in the kitchen.
- Ensure the quality, freshness, and presentation of all dishes meet the 5-star lodge’s standards.
- Participate in menu planning and contribute creative ideas for new dishes.
- Stock Management & Ordering :
- Assist with stock management, including ordering, stock rotation, and minimizing waste.
- Work with the procurement team to source fresh, high-quality ingredients from trusted suppliers.
- Guest Interaction :
- Occasionally interact with guests, especially during live cooking events or specialty dinners.
- Respond to guest feedback and dietary requests, ensuring a personalized dining experience.
- Team Collaboration :
- Work closely with the Head Chef and Sous Chef to ensure seamless kitchen operations.
- Communicate effectively with the front-of-house team to ensure smooth service during meal times.
- Culinary diploma or equivalent qualification.
- Minimum 3-5 years of experience as a Chef de Partie in a fine dining or 5-star establishment.
- Strong knowledge of various cooking methods, ingredients, equipment, and procedures.
- Previous experience in a game lodge or luxury resort is an advantage.
- Ability to handle high-pressure situations and deliver exceptional results.
- Excellent attention to detail and creativity in dish presentation.
- Strong leadership and team-building skills.
- Knowledge of health and safety standards in a kitchen environment.
