Lodge Head Chef / Senior Sous Chef

Purpose Of Position
The Head Chef plays a vital role in creating a thrilling and unforgettable dining experience for guests visiting this Luxury Lodge.
Minimum Requirements
- Culinary degree or equivalent qualifications from a recognised institution.
- At least 2 to 3 years of relevant experience.
- Strong creativity and passion for culinary arts, with a focus on diverse cuisines and modern cooking techniques.
- Knowledge of local and international food trends, sustainable practices, and dietary preferences.
- Computer literacy.
- Outstanding communication skills (verbal and written) fluent in English.
- Flexibility to work evenings, weekends, and holidays as required.
- Willing to stay onsite for 3 weeks & 1 week off (free accommodation and meals).
Key Performance Areas
- Menu Creation: Design seasonal menus that showcase local and international cuisine, emphasising fresh, high-quality ingredients and innovative culinary techniques, in line with costings and budgets.
- Budget Management: Manage kitchen expenses, inventory, and budgets effectively, optimising costs without compromising on quality.
- Kitchen Management: Oversee all aspects of the kitchen operation, including food preparation, cooking, plating, and presentation.
- Ensure compliance with hygiene and safety standards.
- Lead, motivate, and mentor kitchen staff.
- Provide training and guidance to maintain a skilled and cohesive team.
- Quality Control: Maintain high standards of food quality, taste, and presentation.
- Conduct regular tasting sessions and implement improvements as necessary.
- Supplier Management: Build and maintain relationships with suppliers, ensuring the procurement of fresh, seasonal, and premium-quality ingredients.
- Guest Interaction: Interact with guests to understand their preferences, dietary requirements, and feedback, ensuring a personalised dining experience.
