Requirements
- Minimum of 5 years previous Head/Exec chef experience in a Luxury Lodge Environment (Essential)
- Food Hygiene and professional cooking/culinary qualifications (Essential)
- Excellent understanding of food and wine trends
- Has a flair and passion for creating new and exciting gourmet dishes that will get guests talking!
- Knowledgeable of all dietary and religious requirements
- Good knowledge of creating, implementing, and maintaining written control documents and training manuals
- Excellent knowledge and understanding of stock procedures and control
- Excellent knowledge of planning, budgeting, and departmental administration
- Mature, responsible, well-presented individual who can problem solve and is of sober habits
- Hands-on, running shifts from the front line
- Must be used to working remotely in the bush.

Description
- Strong ability and willingness to train, mentor, manage and continually improve the kitchen team through encouragement and positivity
- Comprehensive knowledge of current leading culinary trends
- Systemize and streamline kitchen administration – ordering stock, food preparation and presentation, timely delivery, wastage reduction, hygiene, budget control from receiving to execution
- Proven record of menu compilation and implementation
- Maintain and exceed established standards of food hygiene, cleaning and food handling to maintain impeccable quality within the kitchen, meeting current standards of legislation and compliance.
- Effective kitchen administration to minimize shortages and wastage, assuming full responsibility for any shortages, wastage, and variances.
- Complete responsibility for the profitability of the department.
- Manage and monitor all costs and implement measures to control them.
- Implement, monitor, and maintain constant communication between the kitchen, management, and front of house staff.
- Staff food control: cost, quality, and quantity.
- Perform other tasks and assist in other departments whenever reasonable and deemed necessary by management.
